In a large pot, mix water, sugar, honey, lemon halves, cinnamon sticks and cloves. Add the vanilla bean core. Bring everything to a boil, and when it boils, place the pears in this liquid. Turn on low heat and let them boil for 18-22 minutes, until the pears are almost soft.

Spread the puff pastry on a surface sprinkled with flour. Cut strips of maximum 1cm thickness from it. Wrap them around the pears starting from the base.

Place the pears in a baking tray. Bake at 200C for 20-25 minutes, until the puff pastry browns.

Serve the pears hot with this sauce.

-she looks well cooked,
-75 g sugar,
-a sachet of vanilla sugar,
-5 g gelatin,

Preparation:
Rub the butter that has been kept at room temperature with salt and sugar (a tablespoon) for a short time so as not to cut. Add the yolk and mix well. The flour mixed with the baking powder is poured over this composition and mixed with a spatula, after which it is kneaded with breadcrumbs and becomes a non-sticky dough. Let cool for at least 30 minutes.

During this time, wash the pears, peel the stalks and slice them. Roll out the dough into a thin sheet, up to half a cm long, and place it on a greased tray, rolling it on a rolling pin.

Stir the sheet in place and sprinkle with breadcrumbs to absorb the fruit juice.

Place the pear slices on top and bake for 20-30 minutes.

While the tart is in the oven, chop a well-ripened fruit (or even two if small) and mix with 75 g of sugar, 150 ml of water and bring to a boil until the fruit is soft, so that it can be passed through a sieve. This way you will get a very juicy puree which you flavor with some vanilla and mix well with the gelatin dissolved in cold water and then added to the hot puree.

After the tart is baked, leave it to cool completely and pour the cold pear sauce over it.

Tart top or a packet of commercial puff pastry dough, 500 g cow cheese, sweet, 100 & # 8211 150 g sugar, a vanilla pod, ¼ teaspoon cardamom seeds, 1 sachet vanilla pudding, 2 eggs, 2 pears (cake itself), 200 ml milk 2 egg whites, 100g sugar, 2 tablespoons lemon juice (for meringue)

Pudding powder is mixed with cold milk and vanilla core. Separately mix the cottage cheese with the yolks and sugar, then incorporate the milk with the pudding powder and the cardamom seeds. Separately, beat the egg whites, and then add them to the mixture made earlier. Incorporate with a spatula, stirring slowly to result in a fluffy cream.

Peel a squash, grate it and cut it into juliennes or cubes. Mount the top in the baking tray, taking care to have the edges raised, then add the cheese composition. Pieces of pears are added at the end, on top (they will in cream). The tart thus prepared is baked on low heat for about an hour. Check with toothpick. It's practically ready when the edges of the countertop have browned, and the cream is already hardened and slightly swollen. Leave the tart to cool.

Norwegian meringue is prepared separately. In a metal bowl, placed in another, in a steam bath, slowly mix the two egg whites with 100 g of sugar (ideally it should be powder) and lemon juice. The mixture is kept on a steam bath, chewing slowly, until the sugar melts and the composition is hot.

Then remove from the heat and beat the meringue with a mixer until it cools and hardens. Spread over a cooled tart with a fork or spatula. To caramelize the meringue you can use a kitchen burner, but if you do not have one you can put the tart in the hot oven on high heat for 2-3 minutes.
