This pasta salad makes a lovely light summer meal. Tinned salmon is tossed with macaroni, tomato, spring onion, pickled cucumber spears and mayo for an easy but delightful salad.

- 500g macaroni
- 2 ripe tomatoes, diced
- 4 spring onions, chopped
- 2 pickled cucumber spears, diced
- 1 (418g) tin salmon, drained
- 8 tablespoons mayonnaise
- salt and pepper to taste

- Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- When pasta has come to room temperature, combine it with tomatoes, spring onions, cucumber spears, salmon, mayonnaise, salt and pepper in a large bowl and mix well. Chill before serving.

I found this in a search as all i had in the cupboard for lunch was a tin of salmon and pasta. Got to say - simple, quick and so surprisingly yum! Plus is now a new fave in the house as opposed to boring tuna, sweetcorn pasta-10 Mar 2012
I love to use tinned salmon, as it is so good for you (full of Omega 3 oil) and this recipe is really quick, easy and very tasty. I have made it several times since seeing this recipe.My other favourite is tinned salmon fishcakes, but this is even easier to make.Enjoy!-14 Sep 2012
